Best service in Rio, Priscila, Paloma, Juan. All incredible. And on top of that the food is 10/10 and great drinks! I loved Katz-sü, an Asian food restaurant (something difficult to find well done in Rio) that opened this year in Jardim Botânico, in a region where the number of restaurants worth going to has grown. With an intriguing menu, which mixes classics from Rio bars with ingredients from different Eastern countries, the idea is to go in a larger group and try as many things as possible. I went alone and started with the Taiwan sandwich (R$32). It comes with a bun stuffed with sous-vide pork belly, kimchi, pickles, Korean barbecue, green onions and sriracha aioli. The bun (bread used in baos) is soft and tasty, the pork belly is tender and juicy, without losing its texture. The kimchi brings acidity and spiciness, the pickle brings acidity and sweetness, the barbecue sweetness, the chives acidity and the sriracha aioli (a Thai pepper sauce) elevates the dish with an elegant and softened spiciness. Next, the fuji & okinawa harumaki (R$43) comes with shrimp, pork, kewpie mayonnaise, katz-sü sauce, nori powder and katsubushi, which are very dry slivers of bonito fish, which twitch at the table with the steam from the dish, because they are hydrating themselves. For dishes, I went for Katz-su noodles (R$58) with rib ragout, gochujang (Korean pepper paste), nori, cured egg yolk, chives, pickles and sesame seeds. A beautiful dish, rich in umami, fat and with a unique comfort tone. For dessert, the miso banana split (R$27) comes with crunchy banana, dulce de leche with miso, peanut crumble and Belgian chocolate ice cream. Variations in sweetness, bitterness and saltiness, with textures that prevent the palate from falling into monotony. Excellent! To drink, drinks. I had the light, refreshing and slightly spicy collins nero (R$22), a reinterpretation of the classic Tom Collins, here with gin, lemon, sugar syrup, preserved ginger nero and sparkling water. It's really worth the trip!
