Oktopus, Liverpool - 16th March 2020Confident, smart and well-balanced modern European; a hidden gem in LiverpoolI can't rate Oktopus highly enough. Considering it's presence on the Liverpool food scene since 2017, more should be written about it as it quietly delivers what many more famous restaurants have built their reputation on. First off, the service is impeccable. Relaxed, knowledgeable and inviting, they managed our table cooly and eased on the ambiance even on a slower Monday evening - a quiet round of applause. The menu reads beautifully. Real care and skill is required to put together a menu like Oktopus has managed. Short, uncompromising and a delight whichever way you navigate your way through it. The food is seasonal and subject to change, but the everpresents and big hitters earn their spot.The popcorn mussels are as mouthwatering as you have been hearing - golden, bouncy and piping hot, crumbed sparingly, with a mayonnaise made with malt vinegar as the combining acid. I loved it. A crudo of stone bass, blood oranges and yoghurt was balanced perfectly, served at that sweet spot (not too cold) to make all the flavours harmonize. Its a dish that requires a light hand and experience to bring out the stone bass - the few slices of fresh chilli is add a dimension that you realise after was exactly what the dish wanted.Mondays often leave you with leftover Sunday meats - the brisket this time at Oktopus was stewed down until meltingly tender and left to mellow with a hearty red. Served on toast, in a portion to satisfy two contently, and covered in a snowfall of sharp cheese - we both by this stage had exceptionally large smiles. Lamb loin, served with a rich and earthy garlic white beans, was served as it should be - pink, well seasoned, and an absolute delight to behold. Lamb is best in one of two ways - slowly cooked or spit roasted as can be found in all the best Turkish kebapçıs. The other is as it is done here. The sweet end of the menu is short and self-descriptive; we have both the available options. Chocolate nemesis is as the name suggests, tricky to get right and made popular by River Cafe. On the scale of brownie to ganache, this one treads the line towards the latter. No ragrets. Panna Cotta sooths with creamy touch you expect without being too gelatinous - the neon pink rhubarb has texture and acid and sweetness with a grownup coat of roasted white chocolate. You don't need more.Oktopus sits just off Hardman street, sharing a small courtyard with the Wild Loaf (top tier bakery) and Buyers Club (top tier wine bar). It makes sense that the bread is all from there and the wine list reads very well. Lots of choice under £30 and some interesting orange/natural options moving down into the treat yourself section. At the moment the range reflects the modern European style of Oktopus; Spain and Portugal feature heavily. It is hard to not choose the homegrown wine of El Buli (£28) - I imagine they sell a lot of the stuff.Places like Oktopus are a rare find - they are. You can be convinced that due to the density of restaurants subjected to reviews in London, and even in neighboring Manchester, Liverpool hasn't got the quality required. You fear you might be left short changed for anything more than casual dining.
