Again, please write to us on info@cofoco.dk, so we can report the incident to Fødevarestyrelsen. We are sorry to hear that you have been sick, and we do of course take this very seriously. We do however need an assessment from Fødevarestyrelsen before we can act further in this case. They will help us by determining whether it is likely that your husband and you became sick from dining with us, based on ingredients and possible bacterias in questions, compared to the symptoms and incubation time. Please be aware that sickness due to e.g. Norovirus typically has an incubation time of 12-48 hours. Incidents with shorter incubation time would typically result in several guests from the restaurant being sick, which is fortunately not the case here. Just to be clear, the shrimps you were served are shrimps that you peel yourself - meaning that you are supposed to remove everything from the shrimp before eating it. You would typically not get sick from not cleaning it entirely, however it is not necessarily delicate, which is why we encourage guests to remove it. I apologise that your waiter did not thoroughly explain this to you, that is entirely our responsibility.
