Habiendo visitado muchos restaurantes con 3 estrellas Michelin , este es uno de los 3 mejores. Calidad incuestionable con total consistencia y con una actitud profesional pero relajada. Servicio impecable. Experiencia memorable.
I knew this was going to be one of the most exquisite and memorable meals in my lifetime and I was still blown away. Forget about Cinderella going to the ballroom to dance with her Prince Charming -- they should just go on Date Night to TFL and it would be an infinitely better fairy tale experience. Every minute of the evening was perfection. We were greeted at the door and seated in a lovely private side room on the first floor. The decorations and ambiance was of course upscale, but not uptight: the ideal classy but relaxed California mood. The staff were polite, friendly, and attentive and the entire restaurant felt like a cozy, very personal experience. Although the menu is rotating, it looks like there are signature courses on the Chef's Tasting Menu so I'll describe those: 1. We started off with two snacks of and tiny, delicate waffle cone crisp filled with smoked salmon cream cheese topped with an everything bagel seasoning. I have never had a cone as flaky, buttery, and perfect as that one. Then there was a Ritz "cheese and cracker" biscuit type snack which was also creamy, cheese-y, and reminded me of the Dorito chip flavor somewhat... 2. Oysters and Pearls: One of the best parts of the entire meal, I thought. The idea of tapioca inside what seemed like scrambled egg with cooked oyster, topped with caviar blew my mind..and it tasted even better than it sounds. 3. "Bread and Butter": an "intermission"-type dish which appeared between the seafood (earlier part of the meal) and more serious meats (rabbit, lamb). The bitter cocoa laminated brioche with Animal Farm butter (fresh from Vermont, and only serving Thomas Keller's NY restaurant and TFL) was honestly a tad...normal, which in the grand context was subpar, funnily enough. I didn't get the cocoa aroma at all..but D. said it may be adding flavors that I can't detect, and without the cocoa, the bread would be incomplete. So it was still delicious though and I would of course say "yes" to three more if they offered. The dessert portion of the meal is quite mysterious; all it says on the menu is "assortment of desserts" so you have little idea of what you're getting into. We had caramel ice cream with toasted caramelized, crunchy peanut shavings, a kiwi and rice pudding with basil oil, frozen cappuccino, passionfruit + macadamia nut type cake sliver, donut holes, macaroons, caramels. All do-able for one person I think, but I think the house coffee powered us through. TFL was also so kind as to offer a single chocolate of your choice (marshmallow, hazelnut, chocolate mint, milk chocolate, green tea, caramel..and there may be one or two more I'm forgetting) as well as take-home bag with four shortbread cookies (for each person) in a beautiful tin box. At the every end of the meal (experience), you can visit the kitchen and see where magic happens. It's simply pristine, and they let us take a photo with the Maine Sea Scallops which were ready to be sent out. In general and in detail, the evening was perfect. I am not kidding when I say I dreamed about the lamb that night. Some last tips: 1. We went for a four-mile walk a few hours prior to make way for dinner, and thought that was a helpful way to get prepared. 2. Two half-bottles for two people for a 3 hr 15 minute meal was perfect for us. 3. Eat the shortbread cookies the next morning, as you are likely to enjoy them more on a empty stomach.
How do I some up the experience in so many words...each course was extremely well thought out and decadent. Oysters and Pearl's was the highlight of the night for me but each dish had it's own unique qualities. If I were to make one small critique about the courses, I'd add more contrast of flavors or lighter dishes. Other than the radicchio/pear salad everything was rather heavy. From the second you walk through the door until the second you leave the service is absolutely perfect. All staff was well orchestrated, knowledgeable and very accommodating. The kitchen staff seamlessly created works of art in front of you in a spotless kitchen. The atmosphere was very content. An old rock faced building that opens up to a beautiful courtyard where you can sit, watch through glass windows at the creations being put together in the kitchen. Inside is very elegant but not stuffy, approachable but not drab. To say I'd recommend TFL is an understatement, I look forward to my next visit.
