Middle Eastern, Greek, and Italian communities have been living in the city for decades, and their influence is prominently visible in local food culture. There are also groups of artists, coffee nerds, and musos living in harmony. Brunswick has many attractions such as Methven Park, Allard Park, the Islamic Museum of Australia, Brunswick City Baths, and CERES Community Environment Park. Like many inner-city suburbs, there is an indie vibe to the art scene in Brunswick that is well worth exploring. Cooking directions

Ingredients

  • 2 Baby back ribs
  • 1 Kosmos Honey killer bee dry rub powder
  • Brown sugar
  • Honey
  • Butter
  • Aluminum foil
  • Blues Hog “ Smoky Mountain” BBQ Sauce

Step 1. Set the smoker to 250-275 degrees Fahrenheit. Trim the excess fat from the pork ribs and remove the membrane from the back by using a spoon to lift it and a paper towel to pull it off. Coat both sides of the ribs with the dry rub and place it in the smoker keeping the bone side down for 1.5 hours.

Step 2. Make two sheets of foil into a small bowl and sprinkle it with brown sugar, honey, butter, and a dry rub. After 1.5 hours, remove the ribs from the smoker and place them meat side down on the prepared aluminum foil. Add the ingredients (honey, sugar, butter, and rub) on the bone side as well. Wrap the aluminum foil on the ribs.

Step 3. Place the wrapped ribs back in the smoker, meat side down, for 1 hour. Remove the ribs from the smoker once done.

Step 4. Finally, remove the foil from the ribs and brush the meat with the BBQ sauce and place it back in the smoker for 10 minutes to glaze. Serve with fries or coleslaw.

Tip: For extra depth of flavor finish the cooked ribs on the grill.

Brunswick's reputation is that of a hipster hotspot, but it is not only confined to smashed avos and fancy lattes because of its historic ethnic communities influencing the food scene, art, and community spaces. Brunswick is a true gem of the north, with its bustling, artistic and lively atmosphere.
