Of the farm: core$7/10oz6.7% The center of our “Of the Farm” series, Core is made with apples from an orchard in Plowville, PA, where John Updike spent a part of his youth, then wrote his novel “Of the Farm” based on his formative years there. Varying batch to batch with the seasons, Core is fermented with a house-blend of Wine yeasts, then rested for several months. The result is a delightfully dry and soft, apple-forward cider, with nice body, and subtle minerality.

Of the wild: all of it$8/10oz6.7% We think Cherries are sublime, and they have certainly inspired their own lore throughout history. Cherries in Cider work like a true elixir, irresistible, and delicious. When working out how much fruit to use, we found ourselves saying “All of It” and so All of It it is! Hoping to inspire its own stories, this fruit-forward yet dry cider brings you right to pleasant days, sipping on a liquid cherry pie in the sunshine… This batch was wild fermented.

Of the vine: vidal blanc$8/10oz6.4% Our “Of the Vine” series of Ciders lovingly brings together the worlds of apples and grapes. For this round, we have an 8-month aged cider blend that spent half of its life resting on Pennsylvania Vidal Blanc pomace from our friends at Manatawny Creek Winery. The result is a dry and lightly tannic cider with the underlying floral and fruity notes that Vidal Blanc is well known for. Enjoy this blending and blurring of the lines between cider and wine!

Of the farm: purple daydreams$8/10oz8.1% There's nothing quite like sitting in the Sun, eyes closed, mind adrift, daydreams floating by. Let the lovely dry fruitiness of Purple Daydreams take you there. With loads of local Blueberries and heaps of Hibiscus flowers, this one is beautiful and delicious, and might just serve as a means to getting you to that daydream space… Please enjoy!

Of the bine: super pearl$8/10oz8.1% We use our “Of the Bine” series as a means of exploring how the incredible diversity of hop flowers play with the delicate nature of cider. We pushed the dosing on this batch with two big dry hop additions. We started with mounds of whole cone Triple Pearl grown by our friends at Fawn Hill Hop Farm in Reading, PA, then added equal amounts of Superdelic, one of our favorite hops from New Zealand. A blast of hops on the nose hints at the tropical juice and ruby red grapefruit notes on the palate. Three cheers for Super Pearl!

Of the wild: connection + respect$8/10oz6.7% Once the drink of royalty, Chai has become revered the world over, a drink of the people. And to drink Chai with someone is a show of respect, an effort to connect. In this spirit, we bring the ancient flavors of Chai to Cider. A wild fermented cider aged for 6 months, and rested on oats and a black tea chai spice blend results in a drink that urges towards contemplation, perhaps with a friend, pondering life and its twists and turns.

Of the farm: rustic white (2022)$8/8oz7.1% Kegged in 2022, our first iteration of this fine cider! Our friends over at Broad Wing Farm near French Creek State Park grew a bumper crop of White Raspberries. We went over and picked a bunch and made a small batch of dry White Raspberry Country Wine, then blended it into a Cider. It’s dry and crisp, with strong notes of fresh white raspberries, a nice minerality, and a light sparkle.

Of the village: apples on apples$8/8oz7% We love to find new ways to use stuff that may otherwise be thought of as finished. In the Fall of 2024 we were lucky enough to pick and juice Winesap Apples from the historic orchard at Hopewell Furnace National Historic Site. We then took the Apple Pomace – the ground up and pressed apples, and rested it in another cider. The resulting 9 month old cider has a unique softness and tannic complexity, and with apple skins being high in antioxidants and containing anti-cancer compounds, we like to think some of that extra good stuff makes it through. It takes a Village around here, and Apples on Apples is a great example of that!

Of the farm: the reImagining vi$8/10oz7.7% In a largely throw-away culture that promotes the adage, “Buy, Buy, Buy”, waste surrounds us. However, in a world Re-Imagined, things might be a little different; through creativity we might find a re-birth. Our “ReImagining” series takes ingredients that we have already used and finds them new life. For our sixth batch, we took a dry, six month aged Cider and rested it on 2nd use Blackberries, Red Raspberries, and Strawberries, then added a dose of Kimberton-grown Lavender, and a pinch of Damiana. A lovely hued appearance gives way to a light and easy drinking Cider with subtle tart fruitiness, and a delicate floral undertone. ReImagine your world!
