I love their salads, love their shrimp curry, love their Bolognese. I really like their spaghetti and meatballs but last time it tasted just a hair sugary? I've never liked any sugar in Italian flavors; give me basil! give me garlic! Don't give me desert. Their pizzas taste good, though probably not the best I've had in my life. They tend more toward a light bready, puffy crust, and I'm more a Chicago thick crust kind of person. I don't think New York pizza-crust fans will have their world rocked either. But compared to all the other pizza places I've tried in Fort Collins (a LOT) they are just as tasty, just in their own way. ( P.S. Anywhere I order pizza I always ask for extra-cooked cause seems every pizza joint undercooks their crusts.) For Beer and wine, they love to try different things, and rotate fairly regularly. It is always fun to see what's new on their chalk board. Experimentation makes dining an adventure! So, then desert; I don't think they experiment enough with theirs, but it is hard to change what is consistently great, and I do love their chocolate soufflé, and their mascarpone cheesecake (this is not a typical bleh triangle of cardboard cheesecake, its round and velvety with some kind of syrupy goodness coating it; you gotta try it with a sweeter white wine or maybe a Port-barrel aged dark beer!) What I always loved about VINCENT GASTROTECA (beside the fact that they changed their name to something more accurate) is that they cared about being a bit different. With Covid they've had to knuckle down and stick with basics, and their basics are there cause their great. But I understand they'll be going back to their less hindered ways soon. Beers and wines will change. A new menu will be coming out. And I really look forward to their reservation-only, one-of-a-kind, event dinners created around wine or beer tastings. With a new young chef in the kitchen, eager, friendly wait-staff out front, and covid regulations easing I can't wait to see how they spread their creative wings again.
