In spite of my sky high expectations, the restaurant delivered a fabulous experience. All dishes not only tasted incredibly well and had incredible complexity (the description of the allium dish alone sounded like a multi course tasting dinner!) but also had some really surprising twist to it, such as the passion fruit flavours in the carrot sauce of the incredibly fluffy fish. The preparation of the meat in front of us on a tiny grill was fascinating. The nonalcoholic beverage pairing was equally fantastic - way more interesting than any wine pairing and by itself worth three stars! Always such a great experience learning about l’enclume excellent chef’s techniques thanks to this unique behind the scene experience. An incredible experience. The tasting menu was delicious and satisfying with local ingredients and some flares of creativity - certainly up there in my top 5. Watching it being prepared in front of you in an intimate setting added an extra dimension to the meal, perfect for a special occasion. Ed and Cillian took really great care of us during our visit.
