It's a cute asian dessert spot. I came here to try their pretty popular (or trending) fruit sandwiches. It was good but it was pretty much what it sounded like. I personally liked the matcha flavour one a lot. But having tried this - I think I can make this home pretty easily - in fact anyone can - just the concept is interesting.

Adorable hole-in-the-wall dessert stall serving some of the best soft serve and fruit sandos in Seattle. This tiny shop is essentially just a window front, but the owner does wonders with such a small space. She does everything herself, from taking orders to assembling the parfaits, but she’s remarkably efficient. To make full use of the space while still offering a variety of flavors, Baiten uses a vanilla base for all of their soft serves, and then you can add any flavor of syrup you’d like. Their most popular / OG / must try for any first-time visitor flavor is their matcha. The herbal, earthy matcha flavor goes wonderfully with the creamy, refreshing soft serve; it trends pretty sweet, especially with both the ice cream and syrup, but it’s not too overwhelming. Next time, I’m also excited to try out their other flavors. When I visited in April, they also had hojicha, yuzu, and strawberry, but the syrups do rotate occasionally. Given the small space, there isn’t any indoor seating. There are a handful of outdoor tables, but the ice cream is just as tasty on the go.
