We had a really lovely experience at Callao. It was an intimate surprise birthday dinner for my partner. We were greeted with warmth and our waiter Sam was great. Explaining the history of the cuisine was interesting and a great introduction to the amazing flavours that were to come. Every dish was so beautifully flavoured and presented. Callao Barangaroo is a culinary fusion of Japanese and Peruvian cuisine. The atmosphere and ambience are top notch and you could see that a lot of thought has been poured towards the interior of the place. The best part of our meal was the crudp and snacks. The oysters with pisco granita, cucumber and jalapeño were a standout as well as the freshness of the scallop tiradito - a perfect set up for a culinary journey. The skull island tiger prawns dish also delivered as the main dish. The rest however were simply underwhelming. The chargrilled Fremantle octopus was a little overcooked and the sauces overpowered the dish - making it less desirable and a war of flavours. The wagyu striploin that we got was medium instead of medium rare. Though palatable, it didn’t hit home run for us. The Brussel sprouts was the saving grace for the night of main dish disappointments. Not to mention the cocktails that we had - Geisha and Chicha Sour which were some of the better cocktails we have tasted. The desserts were such an optical treat but remained lacklustre in the flavours department - we ordered the cheesecake and the sweat potato. The over creativity of the desserts were such a novelty but didn’t quite deliver - leaving disjointed and confusing flavours. I would have to say that the wait staff and crew are great! They have been attentive all night and very accomodating with our needs. At such price point, you will be able to find better food quality somewhere else. If you’re deadset on visiting this place, you may need to pick and choose carefully to satisfy your gastronomical appetite.
