I discovered this restaurant while searching for a rare wine I had at Auberge Nicolas Flamel last year in Paris. I found the wine at a store in Kanazawa that told me they sold it to Chevalier. Fabulous, crafted, and reasonably priced cuisine with a small but well selected wine list. The founder was a member of the Chevaliers du Tastevin fraternity based at Clos de Vougeot in Burgundy.
