As far as small franchises go, Skips is in the big leagues with quality and flavor. I'd go as far as to say it's right up there with the giants like In and Out and Chick'fil'A. However, Skips is small and relatively young compared to its competition. It's local to Sacramento and beloved by it's customers. Don't be deceived by its ultra 'fast-casual' persona either. What Skips lacks in bougie dining experience, it makes up for with its ridiculously delicious food. Skips checks all the boxes for good cuisine-- fresh, local products, never frozen, and it prides itself on being locally owned. It's not trying to be McDonalds even though its brand may look like it. It's deceptively cozy and easy to drop in and out. I popped in at the Natomas location, just North of Sacramento and was inundated with skepticism at first. I held my ground and followed through with an order of the Nashville Chicken Sandwich and a Blue Raspberry Slushy. I'd been told there was no going back after this. If there ever was a spicy chicken sandwich to rule them all... It would be found at the hands of some seventeen year old cook, buried in the weeds during a busy lunch rush.   What slid across the counter after fourteen minutes, as I was specifically told to wait, was a thick white box emitting what could only be described as pure Louisiana goodness. My fat-guy senses were tingling. I knew in that box, gold would appear and when I took a seat with my radioactive looking slushy and opened it... like Vincent Vega cracking open the suitcase in Pulp Fiction-- my face lit up... "Oh, we have it". This spicy behemoth stared into my soul. It was ripe with sharp spice and fresh buttery brioche steam. The fried chicken crackled still. This was a chicken sandwich to rule them all. As I gorged on this sandwich I started to question my reality. Would I ever experience something like this again? Is this some mystical oddity that occurred accidentally at the hands of a snotty seventeen year old today? Was this the ghost of Charlie Trotter making my food? Okay... I get it. I might be exaggerating a bit, but in all honesty, Skip's Nashville Chicken Sandwich is pretty incredible. Its dripping coleslaw and punchy pickles only intensified a symphony of flavors in that brined and spicy chicken. It wasn't butterflied either... It was legitimately a whole chicken breast. This bad boy had some girth. It stood tall, looked mean and drew its line in the sand. There was no crossing back. ...A brief history of my experience with the Blue Raspberry Slushy. This neon fluorescent science experiment was not edible. Sorry, but not sorry. As good as the chicken sandwich was, the slushy was that bad. Is this the universe finding balance?  I don't know, but if they're making 5 gallons of this stuff daily then they're making 5 gallons too much.  It's like taking an I.V. drip of straight sugar to the vein. So go enjoy that delectable sandwich, but for god's sake, avoid the slushy or be prepared to seek out medical care for the soon-to-arrive diabetes sugar shock.  This can't be legal...right?
