Located in the heart of #Cholula, State of #Puebla, #CorazondeJaguar offers a culinary experience inspired by the flavors of #Guerrero. Specializing in #Pozole, a traditional Mexican dish, this restaurant aims to deliver an authentic taste of the region. During our visit, we had the pleasure of trying their #GreenPozole, which was indeed delightful and full of flavor. For those unfamiliar with Pozole, it is a traditional Mexican soup or stew that features hominy (dried maize kernels treated with an alkali solution) and meat. The dish comes in different colors, each representing the spices used in its preparation. The #pozoleverde is typically associated with the state of Guerrero. Corazon de Jaguar’s Green Pozole truly lived up to its reputation. The flavors were well-balanced, and the broth had a delightful herbal aroma. The tender chunks of meat added a savory element to the dish, complementing the heartiness of the hominy. It was a truly enjoyable experience, and the Pozole alone warrants a visit to this restaurant. However, our experience with the Chalupas was not as satisfying. The meat in the Chalupas seemed dry, almost as if it had been cooked a while ago and left to sit. This detracted from the overall enjoyment of the dish. While it is important to note that this may have been an isolated incident, it is worth mentioning for the sake of a comprehensive review. Moving on to the restaurant’s ambiance, Corazon de Jaguar has successfully captured the essence of the Aztec culture through its decor. The interior features numerous Aztec elements, creating a vibrant and immersive dining atmosphere. The restaurant’s location within a small shopping mall next to the Grand Pyramid of Cholula is convenient and easily accessible, making it an ideal spot for a meal after exploring the historic site. In terms of service, the staff were attentive and polite, ensuring that our needs were met throughout the meal.
