Dilla Libre Uno offers a mix of hits and misses. I tried the Dragons Blood Margarita; while not unpleasant, it didn’t quite hit the mark for my taste. The bar’s design is questionable, with drink preparation occurring at the far end and front of the bar, suggesting a lack of bar experience in its design. I had the Chupacabra Burrito, which was fresh and enjoyable, though it could benefit from more authentic Spanish flavors. Additionally, the tortilla chips were lacking freshness, and the salsa could have used more spice. I also tried their habanero sauce, but it didn’t deliver the heat I was hoping for. The pricing was a bit steep, even during happy hour, which might not justify the cost for some. The establishment seems to aim for a refined and gourmet Mexican bar and grill experience, but the decor didn’t quite align with this ambition, feeling cluttered despite an organized approach. On the plus side, the service was excellent and the staff was friendly. Overall, there’s potential here, but some improvements in both ambiance and value could enhance the experience. Hi Frank, thanks for the feedback and glad you enjoyed your service. We are not a traditional Mexican restaurant nor are we a full-on fusion restaurant, but somewhere in between. Our drinks and food are all very customizable so we can always add on some serranos to kick up that heat or make you a custom margarita with any variety of our products. We hope to see you again soon for that 5th star :)
