GIZE was a fantastic experience. Elegant, precise and deeply respectful of Japanese tradition, while still feeling modern and unique. Chef Casper seems to sit beautifully between worlds: high quality Japanese produce, local techniques and seasonality, with subtle nods to his European roots. Every detail felt carefully considered, the ingredients, the crockery, the pacing, the design and the atmosphere. The restaurant is modern and refined, but still warm and deeply connected to Japanese hospitality. This is not a restaurant trying to be a traditional sushi counter. It is very much in a class of its own. Delicious food, beautiful execution, impeccable detail, but most importantly, fun, warm and genuinely welcoming. A very special restaurant in Kobe. Strongly recommended. Food: 5 Service: 5 Atmosphere: 5

Alex Quijano様 Thank you so much for this truly wonderful review — it genuinely means a great deal to us. We're so pleased to hear that the experience resonated with you on so many levels. Chef Casper puts enormous care into finding that balance — honoring the depth of Japanese ingredients and seasonality while bringing his own perspective to the table — so your words about him "sitting beautifully between worlds" are something we will absolutely share with him. It's also heartwarming to know that the details came through: the crockery, the pacing, the atmosphere. These are things we think about deeply, and it's wonderful when a guest truly feels them rather than simply notices them. Above all, we're glad the evening felt warm and fun. That, perhaps more than anything, is what we hope every guest carries home with them. We hope to welcome you back to Kobe again someday — there will always be something new on the table waiting for you.

In a quiet stretch south of Shin-Kobe Station a sort walk from our hotel, a Danish chef is making one of the most thoughtful arguments in Japanese fine dining: that the cook is only as good as the people whose produce he honours. Casper Alrik Sorensen, trained in Kyoto, mentored by Mr Endo of London’s Michelin-starred Endo at The Rotunda opened Gize in mid-2025 as the Creative Restaurant Group’s first venture in Japan. From the twelve counter seats, you watch him work with the unhurried focus of someone who would rather under-explain a dish than over-plate it. What sets the evening apart isn’t technique, though the technique is exact. It’s the storytelling. Sorensen names every fisherman, every farmer, every grower behind each dish. Each ingredient arrives with a person attached. And he listens as much as he speaks; ask him a question and he answers it with the curiosity of a chef still very much in love with his subject. The signature gesture, though, is one you carry home: for me he generously gave me a small pouch of his salt blend. I love salt! A small thing, but it captures the place a generous, personal, rooted in the belief that hospitality is the long version of cooking. Gize takes its name from a tea-ceremony idea - the best of the moment. On the evidence, the name fits. Oh what a night!! Meal type: Dinner Price per person: ¥10,000+ Food: 5 Service: 5 Atmosphere: 5

Meg Angliss様 Thank you so much for this incredibly thoughtful and detailed review! It means the world to us that you experienced the heart of what we're trying to create at Gize - that connection between the people who grow and catch our ingredients and the guests who enjoy them. I'm so glad the storytelling resonated with you and that you felt the passion we have for honoring our producers. Your observation about listening as much as speaking really touches me - those conversations with guests are what make each evening special. I hope you're enjoying that salt blend at home! It brings me such joy to know you can carry a little piece of our philosophy with you. That's exactly what hospitality means to us. Thank you for understanding our vision and for such generous words. We'd be honored to welcome you back anytime you're in Kobe.

It was an absolute joy to spend an evening at Gize. What sets it apart from other establishments with great cuisines and chefs with extraordinary skills is the warmth with which everything is delivered. Chef Sørensen and all of his team make sure that you have the best possible time while enjoying the excellent dishes. A delight! Meal type: Dinner Food: 5 Service: 5 Atmosphere: 5
