H and M Custom is located in a spot that feels almost deliberately inconvenient. It's up a slope, past quiet houses and beyond a car park, to the point where you start to doubt your map. Why here? You ask yourself that question before you even reach the door. The day I passed by, it was closed. The shutters were down and there was no smell of frying oil or music leaking out. And yet the shop had a presence. It had a kind of stubborn confidence, like a food truck that had decided to put down roots instead of chasing crowds. The choice of this location tells a story in itself. This is not fast food designed to be stumbled upon. It's a place you decide to go to. It's a destination, not an accident. In a world where fast food outlets usually cling to motorway service stations and blinking signs, this feels almost rebellious. I found myself imagining the owner standing here for the first time, looking at the slope, the houses and the empty space, and deciding that this was the right place. That kind of decision usually stems from belief rather than calculation. Even without eating anything, the place made a good impression. It suggests food made with intention and customers who come because they want to, not just because they happened to pass by. High expectations, quietly set. Sometimes a closed shop tells you more than an open one. H and M Custom aroused my curiosity, and curiosity is a form of appetite in itself.
