Went with the Hanoi-style pho, which was the clear standout. The broth had a deep, slow-simmered richness, and what really set it apart was the layer of beef fat rising to the top, giving each sip a smooth, almost sensual quality. It’s the kind of bowl that you don’t rush through—you take your time with it because the flavor keeps building. Definitely a step above your average pho in terms of depth and overall experience. Also ordered a grilled pork chop with rice to go, and it held up impressively well even outside the restaurant.
