Overall, my experience at Hummus Republic was mixed. The restaurant itself was clean and quiet, and both employees were friendly and polite. Unfortunately, it appeared that there were only two people working during my visit, which made the ordering process much slower and more disorganized than it should have been. One employee was handling takeout orders while the other was preparing meals for dine-in customers. She seemed to be fairly new, as she had to reference an ingredient list for nearly every menu item. That wouldn't have been an issue on its own, but the process became concerning when some ingredients didn't appear to be fresh, and a few items were forgotten during our order. The biggest concern came when the employee started adding chicken to my bowl that looked noticeably dry. I asked how long it had been sitting out uncovered, and she apologized, saying she wasn't sure but offered to have fresh chicken prepared. I appreciated that they made fresh chicken without hesitation, but it was concerning that other customers, including members of my own party who had already ordered, could have been served the older chicken if they hadn't noticed its condition. Although we were only a party of three, I would estimate that it took around 15 to 20 minutes before everyone received their meals. I genuinely felt bad for the employee preparing our food. She seemed embarrassed by the delays, and it was clear she wasn't receiving the training or support needed to manage the front line on her own. The food itself tasted good once we received it. However, after seeing the condition of the chicken, I couldn't help but wonder how long some of the other ingredients had been sitting out as well. I would be willing to give Hummus Republic another chance because the staff was friendly and the food was enjoyable. However, if my next visit is similar to this one, I don't think I'll be returning a third time. Order type: Dine in Meal type: Dinner Price per person: $10–20

We want to reassure you that food safety is our priority, we never serve ingredients that have been sitting out too long, that was a good food but and once you had concerns, fresh chicken was prepared right away. As a new restaurant, our team is still new, which takes some time to prepare, but we’re committed to improving. We appreciate your patience and hope to serve you better next time.
