I had to try the Nagoya specialty "Hitsumabishi" in none other than one of its oldest originators: Ibashou. The place is very appealing and cozy, you have a choice if you want to be seated in a small table or in a tatami setting. I came on a Saturday afternoon just before dinner time and I was so glad that I did not have to wait. Hitsumabushi is basically a grilled eel dish cut into smaller sizes. You have 3 choices on how to eat it: 1. as is, with the signature sauce, 2. adding seasonings like green onions and wasabi and 3. pouring green tea in to it. My favorite is the second with the additional sauce. I was surprised that I liked how the 3rd one tasted. So my advice is to try all of it. Staff are kind, as always with Japanese people.
