Recreating Philly is very challenging here in the Midwest (It is difficult anywhere for that matter). You can't find great "Philly" bread here, because the aesthetic here is different. What we call good, in Philly, is not considered desirable by many people here. Trust me, we hear it everyday, from Midwest people, the bread needs to be softer. It is the opposite at places like Angelo's. We love Angelo's and Max's. We know what they do, and have been there many times, but even in Philly, there are different aesthetics, depending on where you go in the city. We definitely compare well to places like Ishkabibbles or Jim's. Also, here you don't have the culture of Italian bakeries specializing in great hoagie and steak rolls, like at Sarcones and Liscios, and many more. FYI..We have checked into getting their bread shipped here. Also, it is harder to get Cooper Sharp here, which we are currently working on. Philly is indeed unique. Some of our iconic foods don't fare well outside of Philly. For example, do you know how big soft pretzels are in Philly? The Philly Pretzel Factory can't survive anywhere outside of the Philly area, because people in other parts of the country prefer the softer, "Auntie Anne's" or " Wetzel's Pretzels," style of pretzel, and tend to not like actual Philly style pretzels (which, of course, we love). We ARE the closest thing to "Philly" in this part of the country. Do we strive to continually get closer? Yes. We do. When we get Cooper Sharp, and Sarcones bread, we will let you know. ...but we also have to overall walk a middle line to keep customers from this region....hence being more like Ishkabibbles (More people from this region would appreciate them)....but when we have all in place to replicate Angelo's, we will make that available, as well.
