Here, Chef Shinji Kanesaka orchestrates a staggering 20-plus course 'onslaught' of brilliance that stands as a definitive benchmark for Japanese gastronomy. With over three decades of mastery, every deliberate fold of his hands is a testament to a lifetime of discipline; each movement is part of a choreographed ballet of precision. The technical execution is flawless, from the translucent painting of nikiri soy to the unparalleled architecture of the shari (rice) in every bite. The sequence is a relentless parade of luxury: the melt-on-the-tongue richness of Otoro, pristine Uni, and a home-cured Ikura that ranks among the most decadent offerings in the city. This experience was top notch. The sushi was incredible, and the Chef and staff were super friendly and accommodating. I see a lot of reviews here complaining about the chef not being friendly to non-locals, and that could not have been further from the truth. Makes me feel like it says more about the individuals complaining than the experience itself. Highly recommend, 10/10. Food: 5 Service: 5 Atmosphere: 5
