We're really sorry to hear that you feel our ciabatta hasn't been up to its usual standard over the past couple of weeks. Most likely it's been over proofed, (although if you could give us more specific feedback on what's changed, that would be helpful). As a small independent bakery, all of our bread is made fresh on site every day by our bakers, who work incredibly hard and take enormous pride in what they do. We take feedback like yours very seriously. We have to admit that receiving a 4-star review for something we could almost certainly have resolved had we known is disappointing. As a small business, every review has an impact, and we would have been so grateful if you had mentioned it to our store manager or sent us a quick email.
