This is NOT a scam, it is applied to each customer and relates to everything that is put on the table to allow the diner to eat: placemat, napkins, cutlery, glasses, plates; table service and subsequent cleaning operations are obviously included. If you didn't like your poke, we are sorry. We would have accepted her complaints and offered her something else from our extensive menu, if only she had communicated this before tasting the entire dish. As for the bill, you received it at the table via ticket, with all the relevant information and prices, including - indeed - the cover charge. The other paying subjects showed nothing to the contrary. We would also like to warn you that in Italy accusing a person of a serious crime, such as the one you mentioned, unmotivatedly and falsely constitutes defamation - a crime punishable under the penal code.
