During our recent trip to Wajima, we had the privilege of dining at Mebuki, a restaurant born from resilience and heart. Tucked away in a city still healing from the devastating earthquake of 1 January 2024, Mebuki isn’t just a place to eat it’s a quiet, powerful act of rebuilding. Opened exactly six months after the disaster, Mebuki is led by Chef Toshiya Ikehata, formerly of the Michelin-starred L’Atelier de Noto. But this isn’t fine dining in the typical sense it’s something far more meaningful. The focus here is on local produce, traditional flavours, and an unshakable commitment to the community. Even when fishing and supply chains were disrupted, the team went out themselves to source ingredients. That says everything. Between us, we had a comforting katsu nabe with Noto pork in a rich, eggy broth; a crisp mixed fry set; and beautifully fresh sashimi. Each dish felt like a love letter to the region humble yet exquisite, familiar yet full of care. We were the only tourists in sight that day, but were welcomed with sincere warmth. The atmosphere was gentle, the service thoughtful, and the food quietly extraordinary. reminds you that recovery doesn’t always shout. Sometimes, it simmers gently, nourishes deeply, and carries on plate by plate, guest by guest. If you’re travelling through the Noto Peninsula, go. Supporting this restaurant means more than just enjoying a wonderful meal it means being part of something hopeful, rooted, and real.
