After visiting Japan for 10 times, I finally found a sushi place worthy of writing a review Before I start the praise, here is my only complaint tonight- Hokkaido uni was not fresh, the bad taste almost ruin the entire meal (it’s not the best season for uni anyway) Other than uni, everything else was in perfection From appetizers to sushi to dessert - each piece was an Art itself ! From a high end sushi place, I already expected fresh wasabi but what shocked me was the superb aroma and texture of ginger. This has to be the world best ginger ! The half of sushi is rice, so to me rice is very important - and it was just perfect. Warm rice with perfect texture and great balance of seasoning - heavenly (Toyama is known for top quality rice production) My favorite was an appetizer- red clam and striped beakfish My wife’s favorite was also an appetizer - a hot appetizer - puff fish, crab, salmon egg and rice with delicious sauce Finally, I’ve never seen anyone use real wood charcoal to sear a Toro right in front of you (They all use a small cooking torch) To match the meal, I wanted Dassai 23. The chef recommended a local sake, which had fantastic aroma and taste (but much cheaper price tag) Namba san is probably the most friendly and talkative sushi chef in the world - we enjoyed every minute of fine dining experience Now, Namba sushi is Namba One in my Sushi restaurant list Meal type: Dinner Price per person: ¥10,000+ Food: 5 Service: 5 Atmosphere: 5

Namba-san is a very skilled chef and has awesome personality. We enjoyed every single course last evening. Everything except for one maguro nigiri was local from Toyama, even the fruits in the dessert (which were as amazing as the fish). Absolutely wonderful meal!
