As an experienced baker and food lover I am thrilled to recommend Nico Cakes. After sampling a Christmas cake in Tokyo we were eager to try more Japanese cakes. My boyfriend and I saw glowing reviews, and ventured out of our plush resort to try our luck. *JACKPOT* We loved the cream puff, strawberry tart, strawberry sandwich cake,a raspberry mascarpone torte (I forgot the name), and the caramelized cream puff rusk (I forgot the name). The cream puff was phenomenal, the vanilla bean cream was well-balanced and perfectly smooth. The crackle on top was lightly sweet and reminiscent of a concha especial (a Mexican delicacy). The strawberry tart was a favorite. We cooed after each bite. Crisp pastry, chewy filling and lightly sweetened whipped cream, and ripe winter strawberries WOW. The strawberry sandwich cake was everything you expect from a top-tier bakery and the Aomori ingredients take it to the next level. Technically flawless. The raspberry mascarpone torte. Tangy, decadent, and yet delicate. This 7 layer dream manages 3 weightless layers of rich mascarpone between raspberry gelée and lighter than air sponge*. Every bite begs for another. Oishi des is quite an understatement Everything at this bakery is well made. The attention to texture shines through every single crumb! The service was beyond friendly! We arrived in an unfortunate shuffle, 20 yen short to pay our taxi with only 10k yen bills between us— drama ‍ anywho they graciously exchanged our ridiculous bill, we paid our taxi and then they graciously called another taxi for us as we had no way to call ourselves‍‍ TLDR: If the Michelin Guide came to Rokunoho, then Nico Cakes would surely make the list. *for Americans reading this. Yes, it is possible for a sponge cake to be both airy and moist. This cake manages to taste as flavorful and moist as a southern pound cake, but with a delicate texture that delights the tongue.
