Made it back to Inala Plaza after a long break, and the Vietnamese food here still overwhelms me with choice. It was cold out, so I wanted something hot, and skipped the usual beef pho for Non La Saigon. This place doesn't serve beef pho. It specializes in Hu Tieu Nam Vang, a popular Saigon noodle soup built on pork and seafood broth. Most people associate Vietnamese food with beef pho, but pork runs through the cuisine just as much, shaped by generations of Chinese influence, and it makes some of the best soup noodles around. The broth carries layers of flavor I'm still thinking about. Come hungry: the portions are massive, and I walked out completely full.
