Our last night in Honolulu and we wanted to try someplace special. Menu sounded interesting even if there were mixed reviews. We arrived a few minutes before the 2nd seating of the night. The Maitre D' guided us to the bar to wait since the restaurant was still cleaning up from the 1st seating. He guided us through the drinks menu with a very interesting selection of cocktails in case we decided to imbibe before dinner. There were only a few people at the bar. It was quite warm in the bar area, so we were surprised the bartender didn't automatically put 2 glasses of water down for us as any good bartender would do. After serving another party at the bar, he did look over and see us sitting there, but then proceeded to wash glasses instead of offering us drinks and making the restaurant some additional money. After 10 minutes of being ignored by the bartender, the Maitre D' brought us to our table. Note that all parties are seated at the same time and all courses are served at the same time unless you get supplemental dishes. Our waiter came over quickly after we sat to offer us still or sparkling water. Much better than the bartender so far... He then poured our choices from what seemed to by communal water bottles, not our own personal bottles. I mention this because it just seemed in line with many fine dining restaurants that offer still or sparking as part of the set price. Later when we got the bill, we charged $6 each for still and sparkling water without any mention that there would be a charge for this. If there is a charge, most restaurants would either say there is, offer tap water or at a bare minimum give you a fresh unopened bottle. Our waiter said he would let his manager know as we left that we were extremely disappointed that they are not upfront with the cost of their EXPENSIVE water. Since we didn't get that pre-dinner cocktail, my wife did the wine pairing and I did the sake pairing for $60 each. Our waiter seemed to be new so he had some trouble keeping up with bringing the pairing before the respective course was served, which was not a big deal. He was trying. However, the wine pours matched the sake pours and for 1 or 2 were even a little less. Since sake is much stronger than wine, you would expect the wine pour to be much greater. A shot of sake does not equal a shot of wine. Again big problems with their beverage program!! On a side note, almost all of the sakes had a similar profile. Clear, crisp, a bit floral. While there were nice, I expect a pairing to showcase different kinds. Cloudy? sparkling? etc? The actual food was pretty good and substantial enough that adding one of the supplements wasn't necessary for us. As other reviewers have noted, dessert is not included in the set price, which again is a bit pushy when already paying $95 per person, but not a huge deal. We also were ok with the included 20% service charge, coming from NYC, it is pretty standard to tip 20%. Overall, the service was pretty poor. No matter how good the food is, service counts. I would recommend skipping this place as it seems many people have also had issues with the service.
Ohhh, a pleasant surprise from the dining scenery of Oahu! This is not your typical Hawaiian restaurant in the likes of Duke's or Roy's. They offer tasting menu of delectable dishes which are Parisian inspired, but using  the finest locally sourced ingredients. They also have a carefully curated wine pairings which are perfect with every dish. Service-wise, they are to be compared with Michelin-level restaurants. The gentleman attending to us was very friendly, knew the dishes so well, enthusiastic and confident about his chosen field! It's refreshing when someone is genuinely passionate about his job (is it even still considered a job?). The manager of the restaurant is so warm, knowledgeable, and I must add, also very talented (he even has contribution on the restaurant's plates and table setting through his wonderful pottery skills)! Location is so close to our hotel in Waikiki, about 10 minutes of walk or a 5-minute drive. Street parking is available, although I wish they had valet service. I must say this was the best dinner we've had in Oahu thus far, this the five-star rating.
I almost missed the entrance of this restaurant!  The sign is a pillar of metal(?) with Paris.Hawaii raised in the center section.  You walk forward and to the left and you will see that the restaurant is located on the second floor of a building that used to be residential housing.   After walking up the stairs and into the restaurant, you enter through the first door on the right and you will enter a bar area that has general seating to the right.  It's dim but the lighting is sufficient and the overall vibe is very relaxed and classy.  If you look to your left, you will see corridor featuring a bar facing the kitchen and some chairs and tables set up beyond that.   Our hostess was very friendly and when we were seated by our waiters, they took out the chairs and pushed them in for us and it felt pretty classy LOL.  We sat at the bar facing the kitchen and it was such an amazing experience watching the head Chef Yuya prepare our dinner for us.  He was so careful with every detail and it was a delight to be able to watch the kitchen prepare our DELICIOUS meal. The theme of farm to table is stressed throughout the meal as all of the ingredients are locally sourced and highlight a different region of Hawaii.  You can definitely taste the freshness and quality of the ingredients.  I especially liked the "poke" that they served.  They were extremely accommodating for any food allergy and substituted ingredients without a question. One of my favorite thing about the meal was that they prepared bread in front of our eyes.  The bread had already risen at that point but the chef scored, salted, and baked the bread in front of us and it was DELICIOUS.  The inside was oh-so fluffy and the outside was crispy and I've been thinking about it ever since. The dessert featuring a Kilauea Raspberry Lava Cake featuring "Coconut Lava Rock" was AMAZING.  They prepared the coconut lava rock using liquid nitrogen and the whole process was super interesting to watch and the dish was extremely flavorful.  I loved the lava cake and the ice cream combo! PLEASE COME HERE IF YOU HAVE THE CHANCE.  I would HIGHLY recommend sitting where you can see the kitchen.  You can see the passion and care that the chefs put into their food.  The servers are extremely accommodating, polite, and professional.  Can't say enough good things.
