Hi Fae, thank you for taking the time to write such a detailed review. I feel that your description of our vegetarian dishes is accurate, in that they are simple, straightforward, quality renditions. We feel the magic happens when they are enhanced with our house salsa, which you describe well (and we’re very happy you enjoyed). The tofu mole, for instance, is prepared by seasoning and grilling our tofu, and then topping it with our mole. If we let the tofu cook in the Molly sauce until it’s penetrated, then the consistency changes, and we’re trying to maintain a firmer mouth feel. As far as the soyrizo, it’s pretty much the same thing, a clean, simple, good quality, rendition of a classic. Again, the magic happens when you combine it with our house roasted tomato salsa. The al pastor recipe was 20 years in the making before I added it to the menu. It combines Mexico City flavors and Mission District cooking techniques. I am so happy you liked it. It’s one of the items we offer I am most proud of. I’m afraid we may have lost a star or even two because of the surcharge. This San Francisco ordinance surcharge is quite common. However, you are correct in pointing out that it is not mentioned in writing more visibly. I will make that change. Thanks for your suggestion. Again, this is a common surcharge for virtually every restaurant in San Francisco, I hate the fact that you think we were trying to pull a fast one on you, which is absolutely not the case.
