Project Gyutan had been on my list for a long time, and I finally got the chance to try it. My favorite part was the intimate atmosphere, especially the counter seats overlooking the grill. The staff were incredibly friendly and gave us some great recommendations. The food offers good value for money, although I wasn’t particularly impressed by the flavors. We had a wonderful dinner at Project Gyutan and genuinely enjoyed the entire experience. The highlight was definitely the aged beef tongue, which had an impressive depth of flavor and a beautifully tender texture while still keeping that satisfying bite that makes beef tongue so special. Each slice was grilled very well, with a lightly smoky aroma and just the right amount of seasoning, allowing the natural richness of the meat to stand out. The meal felt carefully prepared from beginning to end. The accompanying dishes complemented the beef tongue nicely and made the set feel balanced rather than heavy. The presentation was clean and appealing, and the overall atmosphere was comfortable, relaxed, and perfect for enjoying dinner without feeling rushed. Service was also warm, attentive, and efficient. The staff made us feel welcome and were helpful throughout the meal, which added a lot to the overall impression. You can tell that Project Gyutan takes its specialty seriously, from the quality of the ingredients to the care put into cooking and serving them. If you enjoy beef tongue, especially aged beef tongue with a richer and more concentrated flavor, this restaurant is absolutely worth visiting.
