Valoracion del Guía Michelin

Una estrella MICHELIN: cocina de gran calidad. ¡Merece la pena!
Buena calidad.

Blue Hill at Stone Barns alum Chef Kevin Chen made a name for himself with a series of pop-ups before establishing this stylish Asian-leaning delight. It's nestled inside a narrow storefront, but look for the large red paper clip—it's the only sign you've arrived. Inside, the space is left simple to focus all attention on the inventive food... My dinner here was like a little survey of some classic NYC dishes, heavily informed by immigrant foods. The flavors were generally really strong, and while I read some critic reviews that found the dishes not very coherent, I liked the variety. It felt like a distillation of potential days in my parallel lives—bagels and lox in the morning, my family’s regular Taiwanese lunch spot, snacking on some chips, Cantonese for dinner, oyster happy hours, Japanese for fun, Asian cakes with an Italian twist. Beyond the fun flavors, I also enjoyed the textures of the foods a lot, which is maybe a bit of a weird point to note prominently. But the mashed potatoes for the caviar snack were so perfectly grabbable yet melty, the agnolotti skins were just chewy enough, and the lobster was maybe the most tender I’ve had in my life to date. The staff were also really great, checking that I had a good dinner. I’d say this is one of the more creative tasting menus I’ve had lately, for the sheer breadth of punchy flavors packed together. For a Michelin star restaurant this meal was definitely disappointing. Flavors and combinations were boring. Would not return Service: Dine in Meal type: Dinner Price per person: $100+ Food: 3 Service: 5 Atmosphere: 1

This place has a Michelin star? .....Why? I guess they hand out stars for places that are good in theory. Or maybe they give them to places that used to be good. Whatever the case, it's obvious Red Paper Clip has potential, but that potential was about as realized as universal healthcare in the US. - Sichuan Carpaccio: Why was this accompanied with sweet jujube sauce? It could've been so good without it--fresh, paper-thin slices of beef chicharrón nicely marinated with a Szechuan peppercorn chili oil sauce. This could've been amazing. Instead, the constant infusion of sugary sweetness ruined every bite. Meat should never be sweet, IMO--and definitely not carpaccio in particular. - XLB Agnolotti: Tasty, creative and generously portioned. They should use this as the model for the rest of their menu. - Lobster Three Ways: More like three ways to waste lobster. The miso beurre blanc version was overcooked and the sauce was too salty. Except it was surpassed by the salt & pepper claws, which tasted like they'd just been dipped in a salt bath. And the sticky rice version had barely any lobster, accompanied by nasty, bland, sticky rice that tasted like someone with no taste buds trying to imitate Chinese sticky rice. We were so underwhelmed, we couldn't bring ourselves to waste more money on dessert. There's way, way better Chinese/Taiwanese fusion out there.
