In terms of the Spicy Salmon sushi bowl, our sushi rice is cooled at room temperature once its cooked, this is so that it achieves the best texture and flavour of the dish.Its purpose is to bring the flavours of people who like salmon sushi rolls into a bowl. It's like for example in shops, they sell burrito and burrito bowls as well. If you were looking for rice that is cooked and warm, I recommend the Terriyaki Salmon Teishoku which is our winter special. In terms of spice level, its tailored to more of a western taste, so if you like it more spicy, you can request it to be more spicy next time. In terms of the matcha ice cream, one of our ingredients as part of our seasoning is roasted buckwheat, it has a roast, nutty flavour with the ice cream. I think different people have different tastebud, therefore I am sorry to hear that you didnt have the best experience with the ice cream. Some people do enjoy this dessert.
