Sponge rolls/Swiss rolls used to be best too (egg and light and moist) but now leaning on the drier end (more flour in recipe compared with egg and milk).
Whether it's the buttery puff pastry type which tenderly melts in your mouth, or the more Westernised cookie like texture pastry - both are delicacies.
Personally, I'm a fan of the puff pastry type of egg tart because of the sheer crispy texture which is formed by the many layers of thin pastry stacked up upon each other. A skill which takes years upon years of practise in the kitchen to master.
Unfortunately, Tai Baan Bakery in Eastwood only had the cookie texture egg tart available in their shop but I would definitely say the creaminess of the egg custard inside the tart was still quite delicious, not too sweet.
