Cooking is a real art, it is a sensorial journey through sight, smell and taste but above all through the feelings and emotions that a chef, by preparing his dishes, can arouse in those who taste them. The cuisine of Trattoria Della Torre is pure talent, it is the rediscovery of a pure and true, all-Italian tradition. Emotions of the soul were validated by the smiles and infinite kindness of Thomas and the owner. Thomas is a very professional waiter, with a kind manner, welcoming and able to speak with perfect English, which is very rare nowadays. The dishes on the menu are characterized by a bouquet and persistence on the palate of the highest quality which in a word translates into Italian tradition. The excellent quality of the village cured meats, the cheeses with a full-bodied and deep flavour, the delicious flavor of the milk. The Roman tripe is superb. Its delicacy is fully respected with more than perfect cooking which enhances the softness and at the same time the consistency of the product. Beans and pork rind...sensational. The compotes made by the hands of the exceptional cook release a scent that inebriates and enhances the senses and flavors. The use of incredible raw materials is the cornerstone of La Cuoca's philosophy. A continuous flow of flavors and emotions that begin with the consistency of the elements used and then flow into the perfection of evolution at the first bite. There are two predominant elements: the preparation technique and the excellent quality raw materials. The technique is a broad and expert demonstration of knowledge of what the verb “cook” means. This quality standard allows the customer to fully enjoy the flavours. The secondary elements are never placed to cover the main element of the dish but always accompany it, in order to allow the palate to distinguish the flavors from one another. The ingredients prove to be decisive in enhancing the flavors which, in the mouth, appear clear, full-bodied but at the same time delicate and persistent. Richness, flavor, sweetness, crunchiness.
