コーヒー豆と向き合う“誠実さ”がここまで伝わる焙煎所は稀です。 ブラジル中浅煎りを含む3種を購入しましたが、豆の佇まいだけで職人の覚悟が分かります。 均一な焙煎、丁寧なハンドピック、雑味のない透明な甘さ—— まるで「これでもダメなら」という神風の気迫を感じました。 抽出すると、ジンジャーのような優しい香りが立ち、 煮豆の甘みに似た、ほっとする奥行きある味わい。 派手さではなく“本質の美しさ”で勝負する焙煎だと思います。 本当にいい豆に出会えました。 It’s rare to find a roastery where such sincerity toward coffee beans is so clearly felt. I purchased the lightly roasted Brazil, and the moment I saw the beans, I could sense the craftsman’s dedication. The uniform roast, meticulous hand-picking, and clean, transparent sweetness— it all carries a spirit of determination, almost a “kamikaze resolve” of “this is my best—if this doesn’t work, nothing will.” When brewed, a gentle ginger-like aroma rises, followed by a comforting depth of flavor reminiscent of sweet simmered beans. This is a roast that doesn’t rely on flashiness, but instead competes with the beauty of its essence. I’m truly grateful to have found such exceptional beans.
