I visited Fiotto on July 3. I have been to quite a few Michelin restaurants in Taiwan and in other countries, but this was the first time I experienced this kind of response after a service mistake. During the meal, a staff member accidentally spilled water on me, leaving my clothes and one entire leg wet. The staff member apologized and provided a towel, which I appreciated. I understand that accidents can happen, even in a good restaurant. What surprised me was that the matter ended there. Apart from the apology from the staff member involved, no manager or senior member of the team came over to check on the situation, and there was no further gesture or follow-up. I was not expecting the meal to be free, nor was I looking for any major compensation. Even a small gesture, such as a drink, a dessert, or a personal apology from the manager, would have shown that the restaurant took the incident seriously. Unfortunately, none of that happened. I had specifically made time to visit Fiotto and came with high expectations. Accidents happen and staff members can make mistakes, but the way a restaurant responds afterwards says a lot about its level of service. What disappointed me most was not simply getting wet, but the lack of follow-up. Compared with my previous experiences at Michelin restaurants in Taiwan and abroad, the handling of the situation felt incomplete, especially for a restaurant at this price point and level. For that reason, I can only give two stars. I hope the restaurant will handle similar situations with more care and a more complete response in the future. From the beginning the location was in an old broke down building and junky bathroom for the price you pay it did not match the ambiance. There was only 1 couple when we arrived and 3 people working including the chef so it was a small dining environment. I felt uncomfortable the whole time after the other couple left because one of the waitress was just standing watching over us and I just wanted to be left alone even though I know she was trying to give good service. For almost $300 for 2 people, all the food though pretty and I know carefully curated was bland and tasteless. I don’t even know how this restaurant got Michelin star. I had better pork buns in a Michelin joint in Taiwan for $2. It was absolutely robbery for the quality and value of food fit this price and there wasn’t even 1 dish that was interesting. The thing that upset me was the $8 kombacha for a tiny pour. I obviously wanted to like it for the price & experience but I just wanted to just swallow the food and leave and although I know the workers try their best it does not deserve the price tag or Michelin star.
