Having dined at Michelin-starred restaurants across the world, from Europe to Asia and beyond, I know what the standard looks and feels like. Unfortunately, it was memorable for all the wrong reasons. The salad course was a genuine highlight, beautifully composed and full of intricate technique, showing exactly what this kitchen is capable of. But that care didn't carry through. Both the fish course and the board dish arrived noticeably under-salted, a fundamental lapse at this level. The steak course should have been the centerpiece of the meal. Instead it was its lowest point. No information was offered on the cut or grade. More critically, the steak was extraordinarily tough, sinewy, and completely unchewable. Every single piece had to be spat out. This was impossible to miss. Seated at the chef's table, I was visibly and repeatedly unable to eat the dish, leaving the plate almost entirely untouched. I asked for it to be re-done, and all the the kitchen did was cook it more. In fact it was worse after. I kept trying to chew the meat but unfortunately had to spit it out. I've never had to do this at a Michelin star restaurant. The team watched it happen and said nothing. They never offered to replace it or even ask how it was. They simply became unfriendly after. Following the Wagyu incident, the service team became noticeably cooler and more distant, as though the discomfort of the situation was being redirected at the guest rather than resolved. It was an uncomfortable close to an already difficult evening. To add a final and genuinely concerning note, the following day brought a bout of gastrointestinal distress. My wife had full on diarrhea the next morning. A very disappointing experience, and probably the worst Michelin star experience I've had dining across Asia, Europe, South American, and the US. If you’re looking for a lovely evening in Japan, Nôl is the perfect place to visit as a vegetarian and meat eater. We dined as a party of two one of us is vegetarian, we booked our meal and requested non-meat option on the website. Both the vegetarian and non-vegetarian menu was incredibly well prepared and were very similar to each other. For the vegetarian option the meat was replaced with various seasonal vegetables and mushrooms. Our favourite dish was the salad (in picture 2). It was a delightful experience where every bite was different for everyone, the vegetables harmoniously balanced each other giving each bite a unique flavour than the one before.
