I returned to this restaurant because my previous visit left such a lasting impression. While it can be a bit difficult to snag a reservation, being able to book through Tabelog is a huge plus. Once again, I fully enjoyed their exceptional Italian cuisine in a stunningly stylish space. The Menu for the Evening: • Cold Soup of New Onion and Mosa-ebi Shrimp • Giant Conger Eel with Prosciutto • Kumquat and Tomato Caprese • Fukinotou (Butterbur Sprout) Ice Cream with Tenkasu, Olive Oil, and Sweetfish Fish Sauce • Poached Egg with White Asparagus • Usui Pea Glutinous Rice Risotto with Karasumi (Bottarga) • Cold Pasta with Firefly Squid and Orange • Acqua Pazza of Hatsume (Rockfish) and Bamboo Shoots • Sustainable Beef Sirloin with White Miso and White Wine Sauce • Sakura Shrimp Aglio e Olio • Kiwi and Pineapple Granita • Sachinoka Strawberry and Condensed Milk Gelato with Sparkling Jelly • Petit Fours and Coffee. This restaurant truly embodies the beauty of Japan, cherishing ingredients from Shimane while seamlessly integrating the refined traditions of Kyoto. Every single dish reflects a deep passion, and the wine pairings were absolutely sublime. The experience had leveled up even further since my last visit. I was there 2 years ago, and when I return to Kyoto I will definitely reserve a dinner there. The Chef and his staff are amazing people. The food is fresh and delicious. I think they bring ingredients from the Chef’s hometown. Do not miss the opportunity to eat there. It’s an amazing experience. Food: 5 Service: 5 Atmosphere: 5
