An extraordinary experience for any serious food lover. It was a pleasure to witness preparation and presentation of every and each interesting dish one after another and enjoy the amazing symphony of different flavors and textures and beautiful variety of everything that was served that evening. I went to Mori in Busan for omakase - the kind of menu where you trust the chef and do not fully know what the evening will bring. As I understood, the chef is Korean but trained in Japan, where he also met his wife, and later named the restaurant after her, which made the whole place feel even more personal. What stayed with me most was not only the food, but the atmosphere and the care behind the experience. There is just one dinner service a day, with around eight guests seated at the counter facing the kitchen, so the whole evening feels intimate and focused without being formal. The service was especially thoughtful. I mentioned that I would not be drinking alcohol and asked about bottled water; at first they said no, but a little later they somehow found one for me anyway. Later, the chef’s wife started showing me printed images of the ingredients so I could better understand the dishes - unexpected, slightly funny, and genuinely kind. The meal moved through seafood, sushi, sashimi, grilled fish, shabu-shabu, a snow crab rice course, and ended with Korean mugwort ice cream. My highlights were the tuna sushi, the sashimi with especially tender fish and shrimp, the char-grilled cutlass fish with wild onion, and the rice dish with delicious crab roe. What I liked most was how considered everything felt. At the end, they packed the remaining rice for each guest in a small cardboard gift box, and when I paid, the chef’s wife brought the bill with a handwritten note in English. Not every single dish was was fully up to my humble taste, but as an overall experience - warm, thoughtful, and very personal - it was excellent. For me, easily more than 10/10!
